Jejich činnost musí vyplývat z koncepce hygieny výživy, musí směřovat k ochraně a posílení zdraví menších či větších skupin obyvatelstva. Je nutno stanovit závažnost různých zdravotních rizik plynoucích z výživy a stanovit priority otázek, na které je třeba dát adekvátní odpověď.

Their activities have to follow from the concept of nutrition hygiene, be directed towards the protection and promotion of health in selected or broader population groups. It is essential to determine the importance of various nutrition-related health risks and to determine the most important problems to be adequately addressed.
