Previously, it has been proved that resveratrol exhibits beneficial effect towards human health, maily due to its antioxidant attributes. Naturally, resveratrol occurs in its trans- form and is contained in plenty of plants, but the highest levels were determined in grapevine (Vitis vinifera L.). Thus, a wine contains negligible amounts of this attractive substance and consumption of a wine in appropriate quantity provides advantageous effects on the human body.
Organisms can produce substances which act as protection against the negative effects of microorganisms. Many of these substances belong among the peptides and represent an important mechanism of innate immunity. Peptides having activity against bacteria, fungi, parasites, viruses and cancer are collectively referred to as antimicrobial peptides (AMPs). Due to the increasing resistance of pathogenic microorganisms to antibiotic treatment, AMPs come to the forefront as a suitable alternative. Out of an antimicrobial activity, also the possible use for the treatment of fungal, parasite and virus diseases are studied. Also it has a significant potential use for the treatment of cancer, as some AMPs demonstrated significant antitumor activity.

Many studies have already proven the positive effects of flavonoids on organisms. There are many plants which content important amounts of these secondary metabolites in their bodies, one of those being certainly vine (Vitis vinifera). The consumption of wine products is very popular all over the world and it is also connected with the health beneficial effects that it provides. Red wines content more flavonoids then other white or rosé varieties. It is mainly the consequence of the winemaking process during which the grape skin is either removed of left to release its secondary metabolite content, in case of the red and partially the rosé varieties

One of the possible usages of MALDI–TOF MS is identification of microorganisms. It is highly accurate and faster than other methods and suitable for a large area of microorganisms. But unfortunately cannot reliably differentiate some closely related species. Often, it is possible to detect pathogenic organisms and use their accurate determination for monitoring environment, food processing or clinical diagnostics. Data obtained from mass spectra are compared with library of microorganisms and result of this was agreement or disagreement of microorganisms with specific spectrum.

Tripeptide glutathion is one of the most important thiol compound. It is involved in a wide variety of cellular processes. In the organism it occurs in two forms: as a reduced glutathion (GSH) and as an oxidized glutathion (GSSG). Protective and regulatory functions of GSH are based on changes in its redox state. GSH and GSSG forms together one of the most significant redox couples in the cell. Their ratio under the physiological conditions is usually constant, regardless of the total concentration of glutathion in a cell. The ratio of both forms of glutathion is considered as an indicator of oxidative stress effect.

Nanoparticles are used in a wide range of disciplines due to their properties. The most common preparation is by physical and chemical synthesis, which uses a toxic chemicals that are not environmentally friendly and also limits the potential of the nanoparticles in their clinical applications. It is because of the negative properties of nanoparticles prepared by classical synthesis that a new type of synthesis comes to the fore. This is made possible by the ability of organisms to biosynthesize the nanoparticles either in the body or in the environment. Ability of the biosynthesis was demonstrated in a variety of microorganisms, but also in arthropods or even in mammals. Biosynthesis ability of organisms can be used both for the preparation of nanoparticles and for the reduction of contamination, since the raw materials for the synthesis are obtained from the environment. Biosynthesis by microorganisms could be a suitable alternative to conventional synthesis of quantum dots, mainly due to their low demands on the feedstock and the resulting biocompatibility of nanoparticles.
Influence of different forms of glutathione on Lactobacillus casei ssp. rhamnosus culture. Lactobacillus casei ssp. rhamnosus (L. rhamnosus) of the genus Lactobacillus belongs to the facultatively heterofermentative lactic acid bacteria. In the human body it occurs mainly in the intestine, where it brings a beneficial effect on the immune system. Further, the antioxidant properties and action against oxidative stress belong among its major advantages. In the genus Lactobacillus also the ability to reduce clinical symptoms of influenza was demonstrated. Similar properties to that of the genus Lactobacillus are demonstrated also in glutathione (γ-glutamylcysteinylglycin), one of the most important thiols present in both plant and animal tissues, and also in number of microorganisms. Due to the wide field of application of bacteria of the genus Lactobacillus and possibilities to improve some of their properties in the presence of glutathione, the use of lactobacilli with the addition of glutathione can be considered for the treatment of influenza and support the treatment of influenza illness.
